Please allow this Website to serve as both an introduction to myself, and my particular expertise in the production of kosher gourmet meals, within a non-kosher resort environment.
Over the last 30 years I have had the privilege of coordinating Kosher food production at luxury resort facilities in locations as diverse as China, France, Switzerland, Italy, Monaco, Bermuda, Caribbean, Hawaii, Canada, Cruise Lines and dozens of the U.S.A's most exclusive Resorts.
Under the supervision of a kosher food consultant/rabbi, meals are easily prepared to the high standard of quality of the larger non-kosher group. I shall outline for you a few key requirements for a successful kosher program.
1. The availability of isolating convection ovens.
2. New sheet pans or disposable hotel pans.
3. Though the hotel glass and silver service may be utilized, new china:preferably from the unused hotel stock is necessary.
4. A Chef from the hotel kitchen staff to act as a liaison and prepare the kosher meals.
5. Disposable plates and service to eliminate the need for a second set of milk dishes.
6. Whenever possible I will provide pre-proportioned products that should simplify production.
7. With some items, such as hors d'oeuvres and desserts, I shall order to be delivered prepared.
Though there are many challenges presented with the production of kosher food, often the kitchen staff is surprised at how a little basic knowledge combined with advanced preparation results in a successful kosher event. I will be shipping all required kosher food replacements for the menu's ingredients. The Hotel’s pots and equipment can be “Kosherized” for my kosher food production needs.
